A rainbow on my plate- recipe for summer salad

It’s summertime and it’s an opportunity to enjoy the bounty of fresh fruits and vegetables you see in the marketplace. Eating healthfully is a perfect way to be mindful!

Summer salad inspiration


Green lettuce leaves

Red beets

Carrots


Dressing:


4 parts olive oil

1 part apple cider vinegar

Dash of Icelandic sea salt to taste

Optional: add a spoonful of Dijon mustard, or some fresh garlic or herbs like Cilantro or Basil



Experiment with decorating your salad with Icelandic superfood ingredients like a variety of sprouts from EcoSpíra and Dulce/Söl. Toasted pumpkin, sesame or sunflower seeds, toasted almonds, Goji berries, and edible flowers also make your salad even more delectable!


Note whenever possible use locally grown organically sourced fruits and veggies, as organics are more rich in nutrients and they are free from harmful chemicals.
